Icelandic Thunder Bread or Rye Bread
A recipe for Icelandic Thunder Bread also known as Rye Bread
- 320 grams rye flour
- 85 grams flour
- 200 grams sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 500 ml milk
Mix together all the dry ingredients in a medium bowl. Add the milk and mix together. The dough will be very wet.Grease a metal pot (with a lid) so the bread won’t stick when it’s cooked. If, like me, you don't have a geothermal spring in your garden(!) Siggi suggests you bake in the oven at 120 degrees Celsius (with the lid on) for five and a half hours, or until bread is cooked in the middle. You could also cook in a slow cooker.
